Spring mix
Handful of sliced strawberries
Handful of red grapes
¼ cup walnuts
¼ cup dried cranberries
¼ cup feta cheese
Ingredients: for the dressing
3 tablespoons lemon juice
1 tablespoon Dijon mustard
1 tablespoon extra-virgin olive oil
A pinch of salt
Instructions:
- Rinse the spring mix, pat dry, and place in a serving bowl once dried.
- Top the spring mix with remaining salad ingredients.
- Whisk dressing ingredients in a small bowl until thoroughly combined.
- Toss the salad and the dressing together, and serve immediately.
